Of all our senses, smell is perhaps the most understood. We can name hundreds of colours, yet most of us struggle to describe even a familiar odour without to comparisons: it smells 'like' cut grass or 'like' rain on hot pavement. Perfumers, who spend years training their noses, are the exception. A skilled 'nose', as they are known in the trade, can between hundreds of individual ingredients in a single fragrance, and is expected to the subtle changes a scent undergoes as it dries on the skin. Creating a new perfume can take years of trial and error, and the vast majority of experimental blends never the light of day. Even those that do face an uncertain : a fragrance that delights a panel of experts may leave shoppers cold. Part of the difficulty is that our response to smell is bound up with memory. A scent that one person associates with a happy childhood summer may remind another of a hospital corridor. No wonder, then, that the industry has never quite the knack of predicting what will sell.
